I made up a new recipe for a Christmas party we went to on Sunday, and it turned out very well. I wanted to use some ground lamb, and meatballs are a great party food. So I came up with these Mojito Meatballs using a basic meatball recipe and a delicious mint and lime sauce based on the mint jelly I made this summer.
Lamb Meatballs:
1 pound ground lamb
1 small onion, chopped finely
1 egg
1 tsp ground cumin
1/3 cup breadcrumbs
Mix all ingredients and form into 20 to 25 meatballs. Place on a baking sheet and bake at 350 degrees F for 30 minutes. While the meatballs are baking, prepare the sauce.
Mojito Sauce:
1 half pint jar of mint jelly
4 Tbs lime juice
2 cloves garlic, minced
1 tsp jalapeno jelly
1/2 tsp salt
1/2 tsp black pepper
Mix all ingredients to a smooth consistency. Pour sauce over baked meatballs and enjoy, or place meatballs and sauce in a crockpot to enjoy later in the day.
